Tonight I made Mediterranean chicken salad, and the boys won’t even try it.

However, it was stupidly easy and spectacularly delicious, so if you happen to have girls coming over….

Dressing: Take 6 tablespoons olive oil, 2 tablespoons white vinegar, and 2 teaspoons balsamic vinegar. Whisk this with 1 tablespoon dijon mustard and a tablespoon of sugar, and then add a tablespoon of fresh, chopped tarragon. Refrigerate until chilled.

In the meantime, saute chunks of chicken and make some rice.

Put rice on plate with chicken atop, top with artichoke hearts, capers, and dressing. Consume. Delicious!
